All my fondant covered cakes have a sub-structure (undercoat) of white chocolate ganache onto which the fondant is adhered. This allows for perfectly smooth sides.
Fondant itself is not expensive, it is reasonably priced. Couverture chocolate, on the other hand, is expensive. Around 5kg of chocolate will be used to undercoat an average sized 3-tiered cake. The amount of time it takes to tort the cake and then to ganache it also adds to the cost factor.
(Note: highly decorated fondant cakes (“all-cake” or “cutting”) can be expensive – this not because of the cost of the fondant but the amount of time taken to decorate and/or make the decorative elements).
“All-cake”: self-explanatory, all the tiers consist of real cake.
“Cutting-cake & sheet-cake”: only the top tier is made from real cake, the rest of the tiers are decorated polystyrene blanks. As the name suggests, this serves the purpose for photos and the ceremonial cutting. It is accompanied by decorated sheet-cake that is precut and boxed, ready for plating. The precut portions are approximately 4cm x 4cm x 4cm.
A noticeable difference in price. To illustrate – based on a recent quote (Oct 2020) for a 3-tier wedding cake to cater for 80 guests. All-cake = R6500 vs Cutting-cake & sheet-cake = R5500.
Each portion of sheet-cake can be decorated to tie into the cutting-cake theme.
The precut portions can be kept cool whilst the cutting-cake is out on display.
The fact that the sheet-cake portions are ready to be plated, they can be served immediately after the cake has been cut. This allows you to capture the whole cake experience in one go. With the “all-cake” option, after cutting, the cake must be taken away, broken down, portioned and plated. For a large cake, this can take some time and when it re-emerges, your ceremony will have moved on and the “cake moment” could be lost.
By opting for the cutting-cake & sheet-cake option you get to have the best of both worlds. An edible top tier for you to cut and smush into your partner’s face just like on the telly. And a beautifully decorated show cake for those must-have photos.
As we are all price conscious, this is the option that I advise our couples to take. However if you wish to go All-cake – I’m perfectly happy to do that as well. The choice is yours.
